Diet is the first need of human survival, "eat" as the guarantee of human existence,the first condition of social development and progress, for thousands of years has been with the special attention of the society, all ethnic food itself is not only people’s physical a full needs, it is a traditional cultural ethnic nationalities all over the world. In today’s society, food safety, food hygiene more attention by all of us,and diet culture in traditional folk style is more popular with the people. Diet culture is not only a universal nonverbal information transfer mode, but also to convey things play an effective role. It in many ways to satisfy people’s psychological needs and social needs, become an integral part of cultural life.Kazakh by virtue of their own unique living environment, the special geographical climate and other natural conditions, make full use of their talents, draw lessons from other national excellent diet, eating habits, in a unique food culture have made a lot of reverse. Kazakh culinary culture, is not a fixed form, but is in constant development and change, the adjustment of the diet and the richness of the increase is a symbol of their gradual development and change, diet idea, diet custom is constantly adjust the process of change, is also a combination of foreign cultural elements have introduced and the process of the ethnic food culture system. In this article, through analysis and study kazakh diet structure and the names of dishes,aimed at analysis explained its food culture development integration and change the status quo, probe into its development and ecological environment, economic type,the relationship between the factors such as social development. Therefore, in the background of market economy development, the kazakh diet structure and the names of dishes to do a comprehensive investigation and analysis, multi-level can understand the kazakh diet culture development status and the influencing factors,and can see implied the kazakh’s ideological and moral, cultural accomplishment,living condition, social demand, to understand the kazakh diet culture and its development direction, to provide the reference. At the same time, the names of interpretation of the diet and cuisine culture connotation, expand its popularity, its to the national market, not only to improve the living standards of the Xinjiang kazakh people is important, but also can promote the development of local economy,promoting cultural exchanges.The author through to the Altay region of kazakh restaurant food survey found that as the kazak survival environment and change the way of economic production and improve the traditional and modern kazakh diet kazakh diet has the very bigdifference, the reason is nothing more than survival environment and change the way of economic production and communion between population growth and the national culture, makes the kazakh diet culture has been in constant change.
