Bohai State is a local national power conferred by the Tang Dynasty.With Ning'an County of Heilongjiang Province as the center,there are most of Jilin Province,parts of Heilongjiang Province and Liaoning Province,southern half of Russian coastal state and northern part of Korean Peninsula.It took 228 years from the establishment in 698,the conferment of Tang Dynasty in 713,and the extinction of Liao Dynasty in 926.In the heyday of its development,it was once known as the "prosperous state of the East Sea" by the Central Plains Dynasty.It occupies an important chapter in the long history of our great motherland.Under the profound influence of Han culture,Bohai State in Tang Dynasty gradually became feudal and developed into a feudal society.In the past two hundred years of its existence,due to its relatively stable politics,its social economy has been greatly developed.In addition,Bohai is located in a relatively suitable natural environment and rich in products,so its people's diet life has gradually become rich from simple.Bohai has a vast territory,and its people have made great contributions to the development of Northeast China.Based on the documents and archaeological data,this paper analyzes the catering culture of Bohai people,which can be divided into three parts:The first part introduces the basic composition of Bohai people's food.It is mainly divided into three categories: crop products,fishing and hunting products and animal husbandry products.1?Crop products include grains,vegetables and fruits grown by Bohai people themselves and imported from abroad.Grain mainly includes millet,millet,wheat,Shu and rice.Vegetables are sunflower,garlic,onion,leek and lotus root.Fruits include plums,pears,apricots,hawthorn and cherries.2 ? The products of fishing,hunting and collecting include fish,animals and plants that can be caught and collected by Bohai people.3?Animal husbandry products include animal species raised by Bohai people.There are pigs,horses,dogs,chickens,ducks,rabbits and so on.The second part introduces the diet custom of Bohai Sea.This paper introduces the food utensils,food processing and cooking of Bohai people and the special food of Bohai.1?Bohai people's eating utensils are mainly divided into ceramic,ceramic,metal,jade and bone.Shape also includes bowl,bowl,cup,tripod,basin,bowl,pot,pot,shell and so on.2? Food processing and cooking are mainly for the local animals and plants of Bohai people,in addition to the processing of soy sauce,salt and other condiments.3?The specialty food mainly introduced the Bohai Sea specialty moxa cake,Dahuang soup and kunbu.The third part mainly introduces the influence of Tang Dynasty on Bohai food culture.The influence of Tang Dynasty culture on Bohai food can be divided into two parts.1?The traditional festival customs of the Central Plains in Tang Dynasty were introduced into Bohai,and the corresponding festival food culture was also learned and absorbed by Bohai people.2? Some food of Tang Dynasty was introduced into Bohai Sea.Including agricultural products,wine and tea of the Tang Dynasty,of course,some of the catering utensils of the Tang Dynasty were also introduced into the Bohai Sea and used by the Bohai people.The conclusion is as follows:The economic level of Bohai Sea is high,but there is a serious imbalance in its economic development.The proportion of agriculture and animal husbandry in economic life is increasing year by year,while the proportion of traditional hunting industry is decreasing year by year.1.There is a big difference between the diet life of the noble and the common people in Bohai Sea.The difference of people's diet life shows that Bohai people's diet life has diversity and difference.2.The catering culture of Bohai is deeply influenced by the culture of Tang Dynasty.3.Bohai people introduced crops from the Central Plains,which had a profound impact on agriculture and diet in Northeast China.
