Using the changes of the food culture in Baishishan Village,Hengche Town,Qichun County as the object of study,through clearing all the village archives and related historical documents since 1964,this paper describes the changes of the food culture life of local residents.According to the historical data of field investigation and part of oral historical data,the paper presents the development status local food culture in the new century.Before the reform and opening up,the village was affected by the policy and low level of production technology,which cause the villagers’ diet level was in the state of "melon and vegetable substitute" and "bran-half-year food" for a long time.Staple food is simple--rice and wheat are in a dominant position,and plants such as sweet potato,potato,taro and lotus root are important supplements in the diet structure of the villagers of Baishishan Village.Staple food processing technology is simple non-staple food is scarce,oil production is extremely low,and banquet dishes are also simple.After the reform and opening up,Baishishan Village has changed the past state--"food is not enough,vegetables to make up".The quantity and variety of staple food are sufficient,the supply of vegetables and fruits can be fully guaranteed,and the oil is rich.On the premise of solid material foundation,villagers begin to pay attention to the nutrition,health,food quality and safety of the dietThe main factors causing the change of diet and life in Baishishan village are: The rural economic policy of reform and opening up has activated the enthusiasm of farmers in production.The widespread use of agricultural mechanization,coupled with the popularization of agricultural production technology,has greatly increased the output of crops.Migrant workers,long-distance marriage and other population flows have spread the advanced dietary ideas and dietary skills of other places,especially the awakening of scientific consciousness,so people pursue the exquisite and healthy diet.The change of food and beverage life in Baishishan village reflects the economic state and social life of the countryside before and after the reform and opening up,and reflects the happy atmosphere that the living standard of the vast number of farmers continues to rise under the guidance of the Party’s policy of enriching the people.
