Qi buchang village is an early tofu production and processing site in kunming,dating back hundreds of years.The Qi buchang bean curd is very famous.It is listed with jianshui and shiping tofu as the three major tofu products in yunnan province.Villagers began to form in the long-term production and living the rich tofu culture,a few hundred years later,one can still see the tofu builders still use the traditional process,the most simple of the sweat,the most sincere process,production and cook the most delicious of stinky tofu.This study takes kunming Qi buchang tofu as a case,and focuses on the cultural history of Qi buchang tofu in kunming,revealing the existence status of Qi buchang tofu in every time and space under the social change.The first chapter introduces the background of human geography and the situation in the village,which provides the research foundation for discussing the culture of Qi buchang tofu.The second chapter introduces the process of making "earth" bean curd with traditional techniques and the way of going to market in the 1930 s.Chapter three introduces the work stoppage of tofu workshop and the livelihood of tofu craftsman during the period of agricultural production cooperative.The fourth chapter introduces the special period of the cultural revolution.Chapter 5 introduces the peak period of tofu production in the village after the reform and opening up.As the new kunming policy affects the return of migrant workers,"smelly" tofu in the village becomes "fragrant" tofu.The sixth chapter introduces the Qi buchang bean curd to reach the full sheng,tofu banquet becomes the "luxury objiect" in the village.
