As pork is a very popular food, the attention-degree of its quality and safety has been improvedby the whole society. Besides, to be a key link from pig to pork, the procedure of pig slaughtering hasan important influence on the quality and safety of meat. This paper describes the traceability systemof pig slaughtering. It can effectively realize the tracing management for the safety of meat productson the workshop of pig slaughtering.The details and the methods of inspection and quarantine during pig slaughtering have beenanalized, and the same with the flow of the processes in slaughtering. After that, a method ofidentification of individuals in pig has been designed with the combination of bar code and RFID tag.Besides, a code system of individuals in pig has been established based on the system of EPC code.According to the flows of the processes in pig slaughtering, some important points of processes thathave influence on the quality and safety of pork have been analyzed. Besides, the information ofinspection and quarantine which is necessary during pig slaughtering has been studied. In themeanwhile, the acquisition methods and data structures of the process parameter messages in pigslaughtering have been studied. Finally, the function design and the database design of the traceabilitysystem have completed.The work flow of network structure and data acquisition about the traceability of inspection andquarantine information in the slaughterroom has been designed. After the storage of datasynchronization and the way of conformity verification about the technology of RFID and Wi-Fi havebeen studied, the storage of the inspection and quarantine information in the electronic tag has beendesigned. At last, the traceability system of inspection and quarantine information in pig slaughteringhas been completely developed.Aiming at the status of many heterogeneous PLC controllers coexisting in the line for pigslaughtering, a technology of collecting process parameters based on OPC communication in pigslaughtering has been studied. Then, the data acquisition flow and the client/server structure of theprocess parameters in pig slaughtering has been designed. Simultaneously, a method of each processparameters in pig slaughtering being associated with individuals in pig has been proposed. In addition,the communication between the host computer and SIMATIC S7-300PLC by the way of OPC hasbeen realized. Ultimately, the monitoring system of the host computer has been developed.When the test of the traceability system that has been devoloped in pig slaughtering has been finished, The test platform consisting of RFID、PDA device、 database server、host computer、SIMATIC S7-300PLC、sensors、Wi-Fi and other equipments has been successfully eatablished. Thetest shows that, the system can effectively realize the acquisition of inspection and quarantineinformation and the process parameter datas. Besides, it can also trace and manager all the acquireddatas. In summary, the system accords with the design requirements.
