Rice wine , an outstanding representative health wine, is a kind of low food consumption, lowalcohol, and high nutritional brewing wine who was known as"Liquid cake", it is deeply accepted by the customers owing to its moderate alcohol, abundant nutrition, and health value. For years, owing to brewing process of rice wine do not take the investment in science and technology, the current conditions in production of yellow rice wine has many disadvantages, e.g., manual operation, small scale and low automation level, as well as poor stability in batches. How to improve the integrated automation level in yellow wine production becomes an urgent research project. In this paper, we investigated rice wine fermentation automation and fermentation temperature control, and builded a new automatic control system, combining with LabVIEW, PLCs, and modern monitoring technology, to address the problems of rice wine production. It is highly significant for promoting yellow wine industry.According to fermentation process and control requirements of rice wine, firstly, we set up the main structure of Automatic Control System for rice wine fermentation base on field bus technology. Then we developed software of this system after we designed hardware. Combination of hardware and software can perform many functions,such as acquisition,gathering,storing,analysis and statistics, as well as temperature and DO control.The implementation of Automatic Control System for rice wine fermentation can effectively improve production and quality of rice wine.The system first applied modern monitoring technology, e.g., LabVIEW, PLCs, Intelligent Instruments and Sensors etc., to rice wine fermentation control, and the problem of temperature control and DO control in traditional craft has been solved. The upper computer simulations show the states of fermention and equipment in 3D animation combined with diversified drawing software, then the users can intuitively master fermentation conditions in real time. In addition, the system not only achieves remote monitoring through WEB technology, but it also has self failure diagnosis function, it can remind the man at the wheel through the GSM module when it malfunction, which effectively ensure the system's reliability and stability.Now the system has been used in the production of Nverhong and GuYueLongShan Brewerys successfully and achieved the desired results, the result of practical test verifies the correctness and feasibility of the system; it is significant for popularizing automation of yellow rice wine production.
