Rice wine is the National Culture Quintessence of our country, which has low alcoholcontent, good taste, and high nutritional value. Because of the traditional concept, most of therice wine fermentation is still natural fermentation and hand work currently, that can not keepup science progress. How to change the present situation of the low degree of automation,backward technology and equipment, and the status of the small scale of production is thereason of this topic put forward. On the basis of not changing the quality of the rice winequality, through the research on new technology of yellow wine fermentation, raise the levelof production automation, improve production efficiency, and increase the intelligent control,is the research emphasis in this paper.In this paper, a rice wine fermentation control system which is based on Labview,Siemens PLC, Fieldbus and intelligent instrumentation was designed though the study of newfermentation process. Preparation of PC systems using LabVIEW to realize the temperature,PH, dissolved oxygen and other parameters control, monitoring the production process,historical and real-time data queries and failure alarm; as the next crew, PLC realized theon-site parameters acquisition and the control of field devices, and further describes in therealization of the fieldbus technology-based communication.The rice wine fermentation process is studied this paper, at the same time, the articledeeply studies the influence of temperature on the fermentation control, and focuses onanalyzing the characteristics of the rice wine before fermentation temperature and the effectson the fermentation control. Because the temperature control of fermentation tank has thecharacteristics of nonlinear, parameter instability, and difficult to establish accuratemathematical model, order online tuning PID control parameters, the paper presents anadaptive fuzzy RBF network.The article realizes the fuzzy RBF-PID algorithm by the SCL high-level programminglanguage, which is based on SIMATIC PLC. Compared simulation and actual operation of thetwo aspects of the comparison with the traditional PID system, the fuzzy-RBF-PID algorithmcan better control temperature, the control curve in line was also better match to the rice winefermentation process curve, and improved the control accuracy. The results show that thealgorithm is effective, and has some practical value.
