Now, beer has become one of our essential consumer goods, so that the beer industry has a very broad space for development. However, with non-linear, large hysteresis and strong coupling, production process is very complex, that leads to the traditional control methods isn't able to achieve satisfactory control performance. Therefore, the improvement of the beer control program and overall level of automation is a practical significance.This paper selects the beer fermentation process as an object of study, which begins with a brief exposition of the developments of beer process and production control in domestic and international. The production control includes the control model, mode, algorithms and software. Under the background of the Foshan Budweiser expansion of fermentation production lines phase2, article focused on the composite fuzzy PID control algorithm in the beer fermentation temperature control system applications and their specific design.In theory, this paper proposes a fuzzy PID control algorithms to the fermentation temperature, which is a non-linear, large hysteresis and time-varying object. With the discussion of idea and characteristics about the fuzzy PID control algorithm, the paper designs an appropriate control strategies combined with the actual situation of the beer fermentation temperature. Finally, compared to the traditional PID control, this control strategy can be solved fermentation temperature's large hysteresis and time-varying, and improves the robustness of the system with MATLAB simulation,In practice, the text combines the project to describe the BRAUMAT system detailed, which developed by SIEMENS for the food and beverage automation. The system has a powerful recipe, batch and order, position monitoring, trend record and automatic alarm function. The development of the BRAUMAT system can improve the automation of the beer production, which is able to collect all kinds of information and control production craftwork, so that it has highly reliability and powerful function. The computers and PLC consist of control equipments, which as an engineer station and a local control station, make up the whole fermentation process automatically.In addition, the system has been successfully transferred to the customer and has been put into production. According to the actual reflection, the system has very high stability and good maneuverability.
