Beer fermentation is a kind of typical industrial process that contain property oflarge time-delay and time-varying uncertainty. In this process,General controlmethod can not meet the ideal requirements, So designing a feasible and intelligentalgorithm that could satisfy this control process is of great significance.Based realsmall beer production device in the laboratory, the main work content is as follows.For the big time lag system, using the prediction control strategy, can eliminatethe item of pure lag and improve the speed of system response. Through thetheoretical analysis and simulation verify the feasibility of the scheme. But at thesame time the system containing the property of time-varying uncertainty, when themodel system of time lag coefficient does not accord with the actual value, theoriginally stability system will appear oscillation even cannot reach a steady state.However, the process of beer fermentation is affected by environment, equipmentand microbial activity all the time, so it is difficult to establish accurate system model.So this plan dosen’t fit the beer fermentation process control. Through thephilosophy of fuzzy control, combined with common PID control in the industrialengineering design a multimodal control mode, M-PID control.The way fullyconsider the requirements of the entire process curve, and according to the trend ofdifferent deviation and the deviation rate switch different PID parameters andstrength. Doing simulation under the different time delay, the results meet therequirement of the fermentation process control.By software of VB6.0achieve fuctions, such as implemention of controlalgorithm, communication protocol and the drawing of real-time temperature curve,etc. The feasibility of the control algorithm is verified by practical production, meanwhile, put forward the improvement strategy of variable temperaturerefrigeration.
