As an important branch of fermentation engineering, beer fermentation processfaces many problems needed to be solved. As the result of beer fermentation isdifferent from other industrial processes and the production process requires manycomplex processes, so, the fermentation control has many characters, hard to control,such as period, variability, uncertainty, time-delay, etc. Therefore the level of automaticcontrol for beer fermentation is lower than other industry control process.Having compared with the traditional control strategies and the advanced controlstrategies, fuzzy control method is applied to the complex fermentation system basedon the special characteristics of the actual process of beer fermentation process, whichare not need mathematic description of the system’s structure and parameter, and canobtain excellent control performance. Besides, the fuzzy control method also has thefeature of simple design and strong application.With the hardware—PLC and software—S7fuzzy control configuration, thefuzzy control method can be embedded in the PLC equipment. It can achieve advancedcontrol strategy and obtain excellent control performance without adding extraequipments, and also, has a strong practical value.The main research of this paper:1) By analyzing the characteristics of beer fermentation process and summarizingthe statuses of existing control theories in industry, applying the fuzzy control method,easy to design and implement, to the beer fermentation system can solve many controlproblems: variability, time-delay, nonlinear, uncertainty etc;2) Puts forward a novel fuzzy-rules design method based on dynamic response graph, and also, the new method can simplifies the design process and conducive to thepromotion and application of fuzzy control strategy;3) With the hardware platform—PLC and software platform—fuzzyconfiguration software, the advanced fuzzy control strategy can be applied to thepractical production process under the using of FPL﹠STL language. Moreover, theapplication can get rid of the disconnection phenomenon between the advanced controltheory and practical application, and provide a new direction for the advanced controlstrategies′application.
