Nowadays, as beer has been increasingly popular in people's daily life, beer production has become an important part in Food industry. While, there is a great gap in technology, process and quality control between domestic brewery companies and their foreign counterparties because our brewery industry is still very young. Facing the harsh competition from multi-national companies, domestic technicians is working hard to upgrade the standard of process and integrated automation level, and to enhance the strength of Chinese brewery industry.Brewing fermentation is one of the key steps of beer production, on the basis of projects in breweries factory, this thesis investigated beer fermentation automation and the application of improved ant colony algorithm to the optimization of beer fermentation temperature profile. The author hopes this attempt to apply high technology to brewery industry will contribute to the development of it.The contributions of this thesis are as follows:1. There are two ways improving the brewery process. the first one is to take into account the kinetic model and process, and obtain the optimal process via advanced algorithm after analyzing the process of beer fermentation carefully. The other method pay attention to the control strategies and methods, it is to ensure production according to predetermined process requirements for good. These two methods are complementary ways and neither can be dispensed with, while domestic technicians put almost all the attention on the latter one. Foreign scholars have gotten beer fermentation kinetic model through various methods, and made lots of progress in the aspect of optimization. In China, Only researchers of Zhejiang University have used Ant Algorithm for the optimal temperature curve of beer fermentation. This thesis continues to work in this respect, it uses the improved ant algorithm to optimize the temperature curve of beer fermentation on the basis of fully analysis of the object.2. Along with the technical advances of IT industry, automatic production control systems have developed rapidly. constantly emerging new technology brings hope for resolving the problems coming out in the brewery project implementation. This thesis placed importance on the problems encountered in brewery projects Undertaken by the Instrumentation Institute of Zhejiang University . these problems include Real-time data transferring can not be ensured under the occasions of large number data communication , difficulties in system upgrades and other troubles. This thesis designed Ethernet based industrial automation and control systems using OPC technology, and developed the Client system according to the OPC server of Siemens.
