Beer fermentation as a typical intermittent industrial process has the features ofmulti-variable, large time delay, strong coupling, nonlinear and difficult to establisha precise mathematical model, that resulte the traditional process monitoring andcontrol method are difficult to get good application, so, it is pressing need to set upand improve the new theory and the new methods that satisfy the productionrequirements. This article uses beer production process as the research object,focuses on the process’s failure monitoring method based on the data driven and theutility optimal control algorithm. The main research content is as follows:On the basis of principal component analysis theory, this article proposed a faultmonitoring model based on the segmented multi-way principal component analysisin view of running status in different operating time for the beer fermentationprocess. This algorithm respectively set up models for different operating times, it isavoide the situation that can not well express the original data information byadopting unitary model and the insufficient that resulted by missing some importantinformation. It enhance the precision rate for the fault detection, and it can monitorthe running status accurately and effectively for the production process. Verifying theeffectiveness for this method by the off-line modeling and online conditionmonitoring.This text designed a variable universe fuzzy PID controller in view of theControl precision problem caused by the fixed domain range of the traditional fuzzyPID controller. By introducing domain contraction-expansion factor, dynamicallyadjuste the variable domain for the input and output of the controller, avoide theinfluence due to the improper selection for the domain range, solve the contradictionbetween the control accuracy and the fuzzy rule numbers, made the system could timely and accurately adjust the interference, improve the control range and theadjustment accuracy, betterly satisfy the control requirement for the system. Use thismethod to the temperature-fall period for the beer fermentation, by the experiment,verify this controller has the advantage of fast response, high steady-state accuracyand better dynamic adjustment ability, which not only improves the control accuracyof the temperature, but also effectively suppress the interference by the uncertainfactor in the actual production, ensure the stability of the quality.
