With development of the society and improvement of the living standard,the consumers are taking more and more concern about food safe issues. They are urgent to need a food safety system framework which makes the process of food production and circulation under the supervision and inspection so that consumers can buy and eat assured. At present, all countries in the world strengthen the support to ensure the food security and construct the security system. Food traceability system is supposed as an effective means of food quality safe management.According to the actual situation of food production and sales in China, the paper, taking pork as example, analyzes and study a food safety traceability system suite to china's situation which can trace, track and alarm the information reflected food quality in the food supply chain, in order to improve supply chain food quality safety information management, and promote safety and assured food production marketing and brand-building. The main research content and achievement have been obtained as follows:Using EAN ? UCC System to mark food individual unified, and designing the mark according the features of pork traceability. Using RFID(radio frequency identification) and other automatic identification technology on information of food individual for data automatic identification, automatic acquisition, and automatically input into computer, which provide an information transmission basis for tracking and identification of food individual"Identity".The paper analyzes and design pork production and processing information traceability system on the whole, and dividing the system into six subsystems. Each subsystem's function is decided based on the different links and users. Object-oriented modeling standard language UML is used to model pig feeding production system from static and dynamic aspects.In view of the lack of domestic food alarm system and targeted at the research of the food safety traceability information alarm, the paper proposes a new frame of food safety traceability alarm system, analyzes the structure, processes and interrelation of various subsystems under the framework in detail; puts forward an emphasis research on analysis algorithm of the detecting data abnormality by using artificial neural network and statistical methods; and finally realizes the feedback and tracing of abnormality information and generation and issuing of alarm system. Through the example of the simulation, it is proved that the framework and the algorithm can forewarn the food safety problem effective, and be applied to the supply chain of food production and sales.Finally, the paper further analyzes the particular implementation of the hardware and software in pork production and processing information traceability system. All subsystems of pork production and processing information traceability system have an initial portfolio test in the laboratory, with good results.
