In recent years, emergencies such as typhoons, heavy rain, wars, and major public health incidents have occurred frequently, leading to supply chain disruptions and causing contradictions in the supply and demand of vegetables. This has posed a challenge to the safety of vegetable supply.Emergencies have resulted in ruptures in entity enterprises supply chains, leading to a surge in sales on e-commerce platforms. However, vegetables have the characteristics of high water content, short shelf life, and easy spoilage, which make them unsuitable for long-distance transportation. How to ensure the supply of high-quality vegetables in the premise of demand fluctuations especially the rapidly increasing demand and gain the favor of consumers is the challenge faced by the supply chain of e-commerce companies in emergencies.E-commerce companies rely on economies of scale to ensure the supply of goods. However, under the emergencies, problems such as transportation blockages, difficult platform supervision, and insufficient delivery capacity have also been exposed, affecting the safety of vegetable supply chain about e-commerce.Supply chain resilience is the ability to withstand and self-recover from interruptions when dealing with risks, and is an important ability to ensure the safety of the supply chain. Therefore, focusing on the vegetable supply chain of e-commerce,constructing a supply chain resilience evaluation model to identify factors affecting resilience is the key to quickly and accurately identifying problems and ensuring the stable and safe operation of the supply chain in emergencies.Based on the research of relevant theories such as domestic and foreign vegetable supply chains, supply chain resilience, and cloud models, this thesis studies the evaluation index system of vegetable supply chain resilience on e-commerce under demand fluctuation. The research mainly includes:(1)Reviewing the development status and inherent characteristics of vegetable supply chains.(2)Combining the development status and future trends of vegetable supply chains on e-commerce to construct a scientific evaluation index system. Then, questionnaires are distributed to practitioners and experts in vegetable supply chains, and the data is processed using SPSS to test reliability and validity, deleted indicators that do not meet the requirements, and purify the indicators. The weight of each indicator is determined using the G1 and entropy methods, and a final evaluation index system for supply chain resilience is obtained.(3)According to the characteristics of supply and demand for vegetable, the fluctuation range of vegetable demand is divided.(4)Combining cloud models to construct a vegetable supply chain resilience evaluation model and conducting case analysis on the vegetable supply chain of a fresh e-commerce company.Combining theoretical research, strategies for improving e-commerce vegetable supply chain resilience are put forward to provide substantial help for the better business development of vegetable supply chains for e-commerce affected by emergencies causing demand fluctuations. This thesis classifies demand fluctuations by their intensity and evaluates the resilience of the supply chain accordingly.A comprehensive evaluation index system consisting of six dimensions:predictive ability, resistance ability, survival ability, recovery ability, response ability, and development ability is proposed. This enriches the application research of supply chain resilience in vegetable supply and provides a basis for identifying problems and proposing targeted strategies to improve the resilience ability of the vegetable supply chain for e-commerce.
