With the rapid development of China’s economy,as well as the improvement of people’s living standards and purchasing power,China’s catering industry is also in rapid development and shows a chain trend,catering industry has developed into an important industry in national economic life.The continuous development of the catering industry prompts more and more consumers to regard eating out as an important way to improve the quality of life,and promotes the change of consumer consumption habits and patterns.Attracted by the huge potential of the catering market,more and more investors want to take a share of the catering industry,which makes the increase of catering enterprises,fierce competition in the industry,and the explosive growth of chain catering brands.However,due to the impact of the novel corona-virus epidemic,as well as the strengthening of national supervision and consumer demand,higher requirements are put forward for the development of catering enterprises.Due to the lack of perfect market rules,lack of talent reserve and lack of stable and efficient supply chain,most catering enterprises have high operating costs and low profits,and it is difficult to obtain further development.It is an urgent problem for catering enterprises to improve their profits,find the most effective profit model and get rid of the difficulties encountered in the development under the background of fierce competition and strict requirements of the industry.In this paper,Haidilao,a typical representative of catering enterprises,is selected for case analysis.Based on the theories of profit model,profit model components,financial performance,etc.,literature research method,case analysis method,performance analysis method and other methods,taking the analysis of profit model components as the entry point and combining with the actual operation of Haidilao,the profit model of Haidilao is summarized.The profit model of Haidilao is defined as taking restaurant operation as its main business,supplemented by selling condiment and food products abroad.Relying on its own product and service advantages and complete supply chain advantages,Haidilao gives full play to its brand effect,implements expansion strategy,grabs market share and taps more potential consumers,so as to achieve sustainable profits.Then,the financial analysis of Haidilao cash profit model based on Du Pont analysis,and the implementation of Haidilao profit model performance evaluation using analytic hierarchy process;Finally,based on the results of performance evaluation and combined with the four elements of Haidilao profit model,the profit model of Haidilao is evaluated and analyzed,and optimization suggestions are put forward to explore new profit points,stabilize profit objects,ensure the effect of profit measures and consolidate profit barrier.While helping Haidilao optimize its profit model,In order to provide advanced experience for other catering enterprises facing profit problems.
