At present,there is a very fierce market competition in the domestic catering industry.In addition to the eight major domestic cuisines,there are also western food,Japanese food and so on,which can be seen in the market competition.Under this background,how Hunan cuisine can maintain its own local advantages and be recognized by the general public is an issue that should be paid attention to in promoting the development of Hunan cuisine industrialization.In recent years,the development of Hunan cuisine has shown a new trend,and the development momentum is strong.In the context of the new era,facing the development opportunities of the the Belt and Road and the industrialization of Hunan cuisine,the Hunan cuisine industry has entered a new period of development opportunities.However,in the face of this development opportunity,how to maintain the advantages of Hunan cuisine on the basis of maintaining a good development trend and realize the industrialization of Hunan cuisine is a problem worthy of in-depth discussion.The current research mainly focuses on the development of the catering industry,but does not pay enough attention to the development of Hunan cuisine industrialization.This study discusses the development path of Hunan cuisine industrialization under the background of the new era,which has certain research significance.This paper analyzes the current situation and trend of the development of Hunan cuisine industry under the background of the new era,and analyzes the political,economic,social and technical environment of Hunan cuisine industry.Then it discusses the influencing factors of the development of Hunan cuisine industry through empirical analysis.Finally,combined with these studies,it analyzes the problems existing in the current development of Hunan cuisine industrialization,and puts forward targeted development strategies on this basis,which has a certain reference for the development of Hunan cuisine industry in the new era.The specific research conclusions are as follows:1.through the analysis of the development status,trend and pest of Hunan cuisine industry,the influencing factors of Hunan industrialization were analyzed by questionnaire.By means of factor analysis,this paper extracts the influencing factors of 18 indicators in six aspects: production factors,market demand,Hunan cuisine enterprises,government behavior,intermediary service platform and industrial environment.2.the results of empirical analysis show that the government behavior has the most significant impact on the industrialization of Hunan cuisine(the correlation coefficient is 0.511),while the market demand,Hunan cuisine enterprises,production factors and intermediary services have significant impact on the industrialization of Hunan cuisine(p<0.01).The correlation coefficients are 0.260,0.481,0.218 and0.424 respectively.The correlation is stronger than the price,while the correlation between the industrial environment and the development of Hunan cuisine industry is weak.3.combined with the results of empirical analysis,this paper puts forward some suggestions on the introduction of industrialization development,and puts forward countermeasures in the aspects of building Hunan cuisine brand,establishing a stable raw material supply chain,industrial integration development,industrial transformation and upgrading,strengthening Hunan cuisine talent training,promoting "Hunan cuisine out of Hunan",and strengthening Hunan cuisine culture research. |
