On the premise of the development of cultural tourism, dish culture is an indispensable part of the tourism culture, and the tourism industry continues to integrate and promote each other. As a very important content in the Hunan diet culture, Hunan traditional dishes have attracted more and more attention. Based on the investigation of non-local tourists in well-known restaurants in Changsha, the paper analyzes perception and satisfaction of non-local tourists and the influence factors on perception and satisfaction, and puts forward reasonable suggestions for the promotion of traditional dishes.Based on the domestic and foreign research status of Hunan cuisine, tourist satisfaction, on the basis of the comb, combined with relevant theory and model for empirical research. Through the questionnaire, the selection of Changsha famous Hunan museum launches the research, access to relevant data, using SPSS software to deal with the related data, by using mean value analysis, single factor analysis of variance, factor analysis, cluster analysis and IPA analysis, analysis methods, such as non-native tourists cognition and satisfaction evaluation of traditional restaurant. The study finds that non-local tourists have a certain sense of identity for traditional Hunan. A high degree of satisfaction mainly concentrates in color, flavor and taste, taste, characteristics and local culture and a low degree of satisfaction mainly concentrates in seasoning art, fire control and environmental atmosphere. It is worth noting that the very important for Hunan traditional dishes is container for food and table. Non-local tourists can not experience these easily overlooked cultural performance and thereby the satisfaction of them is reduced. Creating an environment that can show local dish culture can help tourists resonate with local people and quickly melt into local dish culture, and ultimately the satisfaction of tourists is increased.
