In recent years,China's vocational education has developed rapidly and expanded continuously,achieving a historic new leap,entering the "golden age",expanding the international influence of vocational education and standing at a new historical starting point.As a newly emerging major in secondary vocational education in recent years,the specialty of food biotechnology is a highly applied discipline which integrates biology,chemistry,agriculture,nutrition,engineering and management.Its training goal is to train applied talents with all-round development in morality,intelligence,physique and beauty,master the basic theory of common food biotechnology specialty,food processing technology and operation skills of food production equipment,and face the needs of production and management lines,and have strong practical ability,good professional ethics and good team spirit.Teaching materials are the basic basis for carrying out educational purposes,realizing training objectives and organizing teaching activities,the main source for vocational school students to acquire relevant knowledge,skills and learning strategies,and the important guarantee for deepening teaching reform,comprehensively promoting quality education and cultivating innovative talents.At the same time,the analysis of teaching materials is the basis for teachers to design teaching,compile teaching plans and make teaching plans.It is the premise and key to prepare lessons well and achieve the expected teaching objectives,and it is of great significance to successfully complete teaching tasks.In this study,food microbiology,the core textbook of food biotechnology specialty in secondary vocational schools,was taken as the research sample,and the overall analysis of the textbook and its components were carried out by means of text analysis,literature research and structural analysis.The overall analysis included the analysis of textbook structure,textbook content selection,textbook compilation level and textbook function.The analysis of each component includes the analysis of textbook theme,textbook chart and after-school thinking questions.At the same time,the teachers of food biotechnology specialty were interviewed by the interview method,and some suggestions were put forward to optimize the use of teaching materials according to the feedback from teachers.
