In order to find out the various nutrients and their contents in the Allium victorialis,provided a basis for the functional research of the Allium victorialis and the development and utilization of its products.In this paper,the content of common components in Allium victorialis was determined by conventional methods.The volatile components of fresh Allium victorialis were analyzed by gas chromatography-mass method.The relative contents of active ingredients such as phenols,flavonoidsalkaloids,saponins,steroids,organic acids and essential amino acids in Allium victorialis were analyzed by liquid chromatography.The content of flavonoids in Allium victorialis was quantitatively analyzed by high performance liquid chromatography.The preparation process of Allium victorialis extract chewable tablets was studied.The results show:1.The content of protein and vitamin C in the Allium victorialis was higher in the Allium.The volatile components in the Allium victorialis were mostly sulfur-containing substances,mainly 1,3-dithiane and diallyl disulfide.In addition to volatile components,the active ingredients in the Allium victorialis mainly included phenols,flavonoids,alkaloids,saponins,steroids,organic acids,essential amino acids,etc.,including quercetin,kaempferol,quercetin-3,4'-Diglucoside,salicylic acid,trans-p-hydroxycinnamic acid,ferulic acid,methylthio adenosine,betulin,behenic acid,cinnamic acid,tryptophan and the like.The high content of flavonoids in Allium victorialis was determined by high performance liquid chromatography:quercetin 414.74 ?g/g,kaempferol 507.74 ?g/g,neoeriocitrin and quercetin-3,4-diglucoside 114.02?g/g,astilbin 126.14?g/g.These active ingredients allowed the Allium victorialis to have a range of biological activities at the same time.Compared with wild and cultivated Allium victorialis,there were some differences in the content of some ingredients.2.The recipe for preparing the chewable tablets of the Allium victorialis extract was:Allium victorialis extract 10%,lactose 57.3%,MCC 28.7%mannitol 4%,and addition of 1%by mass of magnesium stearate for lubrication when tableting.The particles used in the production are subjected to UV irradiation and ozone smoked for 4 hours to achieve a good bactericidal effect.The prepared chewable tablets have uniform color and smoothness,and the difference in tablet weight and friability are in compliance with the relevant requirements of the pharmacopoeia.
