This study focuses on the Allium victorialis in the northeast of the resource distribution,the sampling analysis of nutritional components and compound beverage of technology research,provide a theoretical basis for the development of northeast wild Allium victorialis.Through the studies,conclusions were made as follows:1 The plant hight,stem diameter,leaf length,color has different degree of difference and only in Hunchun City of jilin Province,Changbai Mountain,Dongning's village,Qing'an village of Heilongjiang Province be found wild Allium victorialis.The resources is on the verge of exhaustion.it is necessary to the protection,development and utilization.2 the contents of protein and fat were the highest in Qing'an,and the contents of total sugar in the leaves and stems of Hunchun were the highest,and the contents of general components of leaves were higher than another vegetables in the Changbai Mountain,and the contents of Vc and polyphenol were the highest.3 The optimum technology of stabilizing color for Allium victorialis juice is that in the scalding temperature of 90? and blanching time for 2 min,the concentration of Zn2+400 mg/kg and pH=8.5.4 The suitable ratio of Allium victorialis juice and grape juice is 2:4.5 The best formulation of the beverage is:30%mixture of Allium victorialis juice and grape juice,4%sugar,0.15%citric acid and 1%honey.The else is water used to dissolve food additives.6 Making up 0.15%Xanthan Gum,0.06%Sodium Alginate and 0.15%CMC-Na is assistant to the stability of the beverage.
