As a new technology,electrolyzed functional water has attracted more and more attention.Scholars have conducted extensive and in-depth studies on its efficacy such as sterilization,but there are still few studies on its safety.In this experiment,the effects of preparation conditions and storage conditions on the indexes of electrolyzed functional water were studied.And on the basis of above,the effects of electrolyzed functional water on the physiological functions of mice were further explored,and then the safety of electrolyzed functional water was preliminarily judged.Firstly,the concentration of NaCl was regulated by a self-provided brine mixing tank,and the electrolysis voltage and time were controlled by a functional water generation device.The influence of the production conditions on the electrolyzed functional water was studied.Secondly,the suitable storage conditions of electrolyzed functional water were screened by single factor experiment.Finally,electrolyzed functional water with different characters was prepared and carried out feeding test of mice for 56 days.The effects of each property of electrolyzed functional water on the physiological and biochemical functions of mice were studied.It was found that all of the degree of electrolytic,the acidity and alkalinity of functional water,the oxidation-reduction quality,and the ACC increased,with the increase of NaCl concentration,electrolysis voltage and electrolysis time.According to the experimental results,the conditions for the most stable preparation of functional water were:NaCl concentration of 1.5‰,electrolytic voltage of 10V,and electrolysis time of 15min.For storing electrolyzed functional water,high temperature,natural light and long-term storage had little influence on the pH value of functional water.But it could cause different degrees of loss of main components of functional water,such as HClO and ClO~-,thus affecting ORP and ACC.And sealing conditions had significant influence on various indexes of acidic and alkaline functional water.Therefore,the conditions of short storage time(Within 7 days)under low temperature(4?),dark and sealed was helpful to maintain the stability of functional water.In the process of feeding functional water(strongly acidic,weakly acidic,strongly alkaline,weakly alkaline)to mice in each experimental group,the state of mice was observed.The results showed that there was no significant difference between experimental group and the neutral(saline)and blank control group(tap water).Then the body weight and organ coefficient(liver,spleen and kidney)of the mice were respectively analyzed,but there was no clear difference to be found.Then liver function indexes(TP,ALB,ALT,AST,ALP)and blood renal function indexes(UREA,CREA,UA)of mice blood was measured.The results indicated that there was no significant difference in liver and kidney function indexes between the experimental groups and the control groups.Finally,the mice were dissected to make tissue sections.After the analysis of the tissue structure and cell morphology of the sections,no significant variation were found between the experimental groups and the control groups on the liver,kidney,stomach and lung tissues of the mice.To sum up,this study obtained the influence rule of the preparation conditions on electricity functional water and the optimal water storage conditions.And it was proved that there was no obvious effect of the electrolyzed functional water with various characters on mice routine physiological indexes and hepatorenal function.It was certificated that electrolyzed functional water had applied potential in food processing,agricultural production and medical and health fields.
