‘Ruiyang' and ‘Ruixue' are high-quality apple cultivars bred by Northwest A&F University with excellent texture and had attracted wide attention.In order to study the differences in texture between the two new apple cultivars and their parents,based on the evaluation of fruit texture characteristics between cultivars,this experiment used optical microscopy,scanning electron microscopy and transmission electron microscopy to observe the cell structure of five cultivars of flesh.At the same time,the texture characteristics of the fruit were measured and evaluated.The main results were as follows:1.The texture of the fruit was determined by TPA and sensory evaluation.The results showed that the texture characteristics of ‘Ruiyang',‘Ruixue' and their parents were significantly different.During the storage,the hardness of ‘Ruiyang' and ‘Fuji' decreased less,while that of ‘Qinguan' had a greater reduction in hardness;the fruit of ‘Ruiyang' had greater gumminess and chewiness,while ‘Fuji' and ‘Qinguan' was small.The crispness of‘Ruiyang' and ‘Fuji' was relatively close,the taste was crisp,and they were obviously better than ‘Qinguan',while the crispness of ‘Qinguan' was small and had a large roughness.In the later stage of storage,the taste of ‘Qinguan' became mealy.The hardness of ‘Ruixue' and‘Cripp's Pink' were large,while the hardness of ‘Fuji' fruit was small.The texture of‘Ruixue' was hard and crisp,and was more crisp than ‘Cripp's Pink'.2.In this experiment,the cell structure of the fruit was analyzed.The cell morphology of ‘Ruiyang' and ‘Fuji' was similar.The cell area of the pulp was large,the cell gap was small,and the arrangement was tight and neat,but the cell area of ‘Qinguan' was small,the cell gap was large,and the arrangement was sparse.The observation and analysis of the fracture of the flesh showed that the flesh of ‘Ruiyang' and ‘Fuji' was always intracellular fracture during the cold storage process.In the late stage of cold storage,‘Qinguan' was transformed from intracellular rupture into intercellular separation.The cell wall of the flesh cells was observed and analyzed.During the cold storage process,the cell walls of ‘Ruiyang'and ‘Fuji' pulps degraded slowly,the cell wall was intact,but the cell wall of the ‘Qinguan'flesh degraded sharply,and the cell wall collapsed during storage.3.Observing the cell structure of the flesh of the mature fruit,the cell morphology of‘Ruixue' was similar to that of the parents ‘Fuji' and ‘Cripp's Pink',but the cell gap was smaller and the cells were arranged more closely.The fracture patterns of ‘Ruixue',‘Fuji'and ‘Cripp's Pink' had not changed,and they had been dominated by intracellular breaks.The difference in cell wall variation between ‘Ruixue',‘Fuji' and ‘Cripp's Pink' was less andthe degradation was slower.
