The nutrient composition of apple fruit is a key intrinsic quality characteristics,which plays an important role in fruit flavor and commodity value.'Ruiyang ' and 'Ruixue' are two new late-ripening apple varieties selected by Northwest University of Agriculture and Forestry.Previous studies have found that the economic characteristics of 'Ruiyang' apple are obviously superior to 'Qin Guan'and similar to'Fuji'.The 'Ruixue' apple combines the advantages of 'Fuji' and 'Cripp's Pink '.However,the differences in sugar acid,phenols,vitamins and minerals in 'Ruiyang','Ruixue' and their parents have not been discussed.With regards to this,'Ruiyang',' Ruixue ' and their parents 'Qin Guan','Fuji' and 'Cripp's Pink' were used as experimental materials to analyze the difference of main nutrients in fruit.and the effects of cold storage and bagging on the main nutritional components of fruit were studied,to provide technical support for high quality and efficient production.The main results were as follows:1.The composition of main sugars,organic acids,compounds in 'Ruiyang','Ruixue' and their parents were quite similar,whereas the contents were showing significant differences,the sequence of main sugar in 'Ruiyang','Ruixue' and their parents was respectively.great influenced by their male parents' Qin Guan'and' Cripp's Pink '.2.According to the analysis of functional nutrients,there were 9 types of polyphenols which belong to 5 different categories in the peels of different varieties.The total amount of polyphenols substances in 'Ruiyang' peel was significantly higher when compared to the parents 'Fuji' and 'Qin Guan'.in addition,the phloridzin and chlorogenic acid contents in 'Ruiyang' was significantly higher to 'Fuji',the polyphenols substances in 'Ruixue' was lower than that of 'Cripp's Pink ',similar to 'Fuji'.in addition,the epicatechi and catechin contents in 'Ruixue' was significantly higher to 'Fuji'.At the same time,there were 7 types of polyphenols which belong to 4 different categories in the pulps of different varieties,the total amount of polyphenols substances in 'Ruiyang' pulp was between their parents 'Fuji' and 'Qin Guan'.The total amount of polyphenols substances in 'Ruixue' pulp was significantly lowe than 'Fuji' and 'Qin Guan'.3.There were 4 vitamins were analysed in pulp,the content of vitamin C was highest,followed by vitamin B2 and B7,and B9 was the lowest.There was no significant difference in vitamin C content between 'Ruiyang' fruit and their parents.And the vitamin C content in the fruit of 'Ruixue ' was higher than that of 'Fuji',lower than that of 'Cripp's Pink'.4.There were 5 types of mineral substance in 然uiyang',然uixue'and their parents,The contents of minerals K,Ca and Mg in the five cultivars were relatively higher,followed by Zn and Fe.The content of minerals Ca in 'Ruiyang' fruit was similar to 'Fuji' and higher than 'Qin Guan',the content of minerals Ca,Zn in ' Ruixue ' was significantly higher than 'Fuji.5.During cold storage,the changes of sugar,acid,polyphenols and vitamin substances in the five varieties were similar,but there was a slight difference among different varieties.The optimum palatable period of 'Ruiyang' fruit was about 60 days after harvest,and that of 'Ruixue' was about 90 days after harvest.6.The results of correlation analysis showed,there was a significant positive correlation between total sugar,mineral K and total polyphenols content in apple fruit.The correlation coefficient between sucrose and cyanidin-3-galactoside was very large.
