Food safety is the bottom line of the food industry,and it is also a focus of attention in the food industry.In recent years,with the frequent occurrence of food safety accidents in China and people's yearning for healthy living,food safety issues have been concerned by the community increasingly and become hot issues of society.The research topic of this thesis is the improvement of FSMS(food safety management system)for air catering company.The air catering industry is a special branch of the food processing industry and an accessory industry of the civil aviation industry.In 2016,China's civil aviation transported more than 100 million passengers.If a food safety accident occurs on a civil aviation aircraft that is flying,it is difficult to handle it immediately due to limited conditions,which may directly affect the safety of civil aviation.Therefore,the method of improving the safety of air catering foods and improving the food safety management level of air catering companies is not only an issue for the industry,but also a concern for all sectors of society.Under this background,it is a strong practical significance to thoroughly study the improvement of the FSMS of air catering companies.This thesis first introduces and reviews the management systems and standards used by HS companies,such as the GQS global quality system,the ISO9001 Quality Management System,the HACCP(Hazard Analysis and Critical Control Points)System.Afterwards,the basic and current situation of the HS's food safety management system are elaborated.Then,using the Air Catering Food Hygiene Regulation and the World Food Safety Guidelines as benchmarks,this thesis also identify,induce and analyze the problems in the HS's food safety management system,and assessed the risks of the problems is made.Finally,this thesis puts forward the overall improvement strategy of the food safety management system of HS.It is necessary to update the food safety management system documents in time,improve the food safety awareness and training of staff,and establish an efficient maintenance mechanism for plant and equipment to improve the system performance and ensure food safety.It is hoped that the research of this thesis will be used for reference for the improvement of the food safety management level of other domestic peer companies.
