After the Qing soldiers entered Shanhaiguan,the Qing Dynasty regime had experienced the rich material accumulation and Institutional development.During the Qianlong period,the Imperial Diet institutions and the diet system also tend to be finalized.On this basis,Qianlong had more sufficient conditions to develop the Imperial Diet,so it was also the most representative part of the Qing Dynasty court imperial meal.The construction system and geographical location of the the imperial kitchen were basically confirmed during the Qianlong period,and the management of personnel and tableware was strict.Most of the food ingredients came from the tribute,the purchase and the manufacture from various departments of the Ministry of Internal Affairs.After experiencing the deliveration of the various departments of the Ministry of Internal Affairs,the imperial kitchen was supported by various departments and then made into a royal meal by staff of the the imperial kitchen.Qianlong Imperial meal represented the highest level of diet in the social class at that time.It was characterized by a large number of ingredients,a wide variety of dishes,and frequent feasts.With the deepening integration represented by the Man Nationality and Han Nationality and the integration of Lu cuisine and Huaiyang cuisine in the imperial diet,Qianlong Imperial meal was influenced by Han cooking techniques and dietary trends.The ethnic and regional integration of Qianlong Imperial meal was also very prominent.With Qianlong's getting old,the style of Imperial meal had gradually changed from the early Man Nationality-style to the lighter diet,which fully reflected the stage characteristics of Qianlong Imperial Diet.The use of ingredients and the cooking methods of dishes all reflected the staged characteristics of the food culture,which was represented by the gradual and spontaneous fusion with the Han nationality.The rapid growth of the overall population of the society during the Qianlong period,along with the development of agricultural production and commercial economy in Beijing and the active population movement and thehigh integration of the national and regional population made the residents of the Qing Dynasty have more sufficient material conditions for the pursuit of life,which had further promoted the national integration and regional integration of the diet level.The method of cooking and the use of ingredients reflected the spontaneous integration of the ethnic groups and the local Chinese cuisine was also spontaneously integrated into the food culture of the Beijing.This made the capital area not only become the political,economic and cultural center of the Qing Dynasty,but also center of the food culture.With the economic development of Beijing,Formed many characteristics,such as the diet that follows a diet,the blend of flavors,Frequent banquets In civil society and the prosperity of the catering industry.Qianlong's imperial dishes had entered the private sector,which gave birth to the gradual imitation of the banquets and further promoted the formation of luxury and singularity in the diet,reflected another aspect of the social atmosphere under the economic development of Beijing in the Qing Dynasty.
