With the continuous growth of economy since the reform and opening,the beef industry of China has a rapid development,beef production continued to increase,the proportion of the total meat production increased year by year.But for a long time,the macro statistics of China's beef consumption and the actual consumption data are not consistent.Therefore,exploring the current our country beef production and consumption issues of convergence,guarantee the government to develop a more practical Chinese beef industry development strategy and policy has important realistic significance.This paper summarizes the domestic and foreign theory and existing research,from the edible part and the loss of concepts of the beef cattle breeding,transportation(to slaughtering enterprises),slaughter,rest,cold acid,segmentation,frozen storage,transportation(to wholesale / processing enterprises),loss of retail sales of each link the discussion,and according to the China residents diet added head,hoof,analysis of the edible part weight of carcass organs,comprehensive loss,summarize the edible,effective supply capacity and so on.Finally,the China beef carcass edible rate and make some comparison between Japan and the United States,and put forward policies and recommendations.Based on the above research,this paper draws five conclusions: First,the total loss rate of beef production and marketing of Chinese was 9.52%.;Second,China's overall edible rate of 94.84%.This is due to China's consumption habits,originally in the Bureau of statistics within the production of beef cattle hoof head tail,internal organs have also been widely eaten;Third,China's edible beef carcass rate higher than the United States and Japan;Fourth,the effective supply of China beef was 6 million 130 thousand tons in 2013;Five,the average effective supply of China beef was 4.8 kg in 2013.With the further improvement of China's beef consumption ratio,the loss is important to get attention.Therefore,this study presents the following policies and recommendations: we should contact the actual consumption data to formulate the policy,adjust the beef meals structure,improve dietary habits,strengthen financial support,promote more sophisticated packaging,pay attention to beef safety problems,severe blow beef smuggling phenomenon and other policy recommendations.
