With the enterprise increasingly fine division of labor, catering enterprises in supply chain node is increasing, the stability of the supply chain and cooperative efficiency is limited.But in the service supply chain it can be some solved in some degree. Based on a great deal of research and data analysis, this paper engages in dealing with industry development dilemma, constructing supply chain ecosystem. Using of theoretical and empirical, qualitative and quantitative research methods, service innovation research are expounded, through a large number of literature retrieval and access to the service industry, reference service innovation model put forward value mining model. Under business process reengineering theory guidance, sets catering services supply chain process. Using the individuality and commonness of combination methods, put forward catering service performance evaluation system of supply chain. Studying advantages and disadvantages of a specific enterprise when transiting to the provider of service supply chain, and preliminary define the development mode.First, learning from "the four dimensions model" of service innovation, build three-dimensional mining value model of catering service supply chain, mining catering supply chain value from three aspects:the service contents, service process and service evaluation analysis, Secondly, it analysis catering industry ecosystem supply chain, clear service flow characteristics; using business process reengineering theory, make specific business service process more reasonable and construct catering service supply chain process. Once again, it analysis performance evaluation of the general index about supply chain and, combined with the characteristics of catering industry, construct service supply chain performance evaluation index system of catering enterprise; and use fuzzy comprehensive evaluating method to evaluate the performance of service supply chain. Finally, using the specific enterprise as an example,point out the direction of mining value about service product and, put forward model of service supply chain and service model, analysis the opportunities and challenges with transforming into a service provider of Supply Chain.
