The significance, the status, trends of the fermentation process are firstly introduced in this paper, and the problems faced by the detection of fermentation parameters and system control are analyzed. The development level of fermentation industry is related to the quality of life of the masses. But currently, there are many problems in our country’s fermentation industry. For example, the technology and equipment of fermentation industry in China are lagging behind, and it’s lack of systematic study of the industrial-scale fermentation process control, many new industrial technology research and development such as process control, status monitoring, and dynamic optimization are still basically in their initial state. Fermentation process’s characteristics are usually large time delay, nonlinear, strong degeneration and multiple input multiple output, so there are great difficulties in the fermentation process parameter measurement and system control, and they affect the quality of the fermentation products seriously. Therefore, the successful resolution of the fermentation process parameter detection and system control to meet the technical requirements have important practical significance.Secondly, Fermentation process is large time delay, nonlinear and strong degeneration and multiple-input multiple-output, so RBF neural network is used on the fermentation process to establish the mathematical model of the soft sensor in this paper. The algorithm has good tracking performance for the fermentation system and achieved satisfactory control effect in practical applications.Thirdly, according to the distributed control system and interface technology theory, the structure of the fermentation system is designed in this paper, the fermentation system is given the function of test, control and manage based on field bus technology, and it reaches the fermentation system parameter detection and system control technology requirements. The fermentation system can be divided into three parts:field parameter measurement system, field parameter processing system, control system, and the system is composed of two layers:basic automation and supervisor. Basic automation is completed to control the action of acid pump. alkali pump and feeding pump by SIEMENS PLC, supervisor is made up with industrial computer from Yanhua corporation of Taiwan, and it has many functions such as configuration, table, supervision, alarm.At last, industrial control software kingview6.51is applicated to design fermentation parameters monitoring system, it has such characteristics:operated simply with intuitionistic menu, good controlling effect, active pictures, high adjustability, high reliability, and high stability.
