The microorganism fermentation engineering is the basis of biological engineering and modern biological technology and there in dustrialization. With the development of the fermentation technics, it is more and more dependent on the demand of automation control technology. However, the mechanism of biological fermentationprocess is complex. It has high nonlinearity and time variation, and some of the biological parameters are difficult to be measured online, thereby some sophisticated optimizing control algorithms and methods cannot be achieved. Most of the current fermentation control system based on different measurement and control units, such as MCU, IPC, PLC, DCS, FCS and VI, adopts a unit style structure, and lacks the intelligent units of measurement and control to the biological parameters difficult to be measured. Therefore, soas to achieve the online optimizing and controlling of the biological fermentation, it is eager to research on the intelligent fermentation process system combining AI technology.In this paper, on the base of real application of fermentation measurement and control system detailedly analyzed, an intelligent measurement and control system construction of fermentation process was introduced. On the base of network structure research of the fermentation process measurement and control system, the evaluation of the biological parameters difficult to measure can be achieved by intelligent measurement unit, and the effective regulation of the parameters by intelligent control unit. Applying OPC as the bottom layer and Web Service as the upper layer, the intelligent measurement and control AJAX based network system in fermentation was developed. Combining the optimized control system of L-lactic acid fermentation process, the experimental validation of the delivered intelligent measurement and control system was processed.The result of the experiment indicates that, the intelligent measurement and control system applied in L-lactic acid fermentation process optimization control system, could use the soft-sensing module evaluating the consumption condition of nutrient solution, and add according to the setting glucose concentration, so as to achieve the optimization of fermentation process and increase the product rate of fermentation.
