Nowadays, food safety incidents occurred continuously, it seriously endangers thehealth of people, at the same time, our country's food exports suffered technicalsanctions, and domestic food market also suffered the impact of foreign food. China is ahuge pork production and consumption country, but the meat management system isincomplete, production technology is still relatively backward, managers and consumerscannot get the full information of the pork, the pork quality cannot also not be ensured,so, more and more consumers and government focus on the pork quality and safety,research of the pork quality and safety becomes particularly important.For set up traceability system of pork production, the main work in this paper is asfollows:First, traceability key factors in slaughterhouse and automatic identificationtechnology are fixed in this paper. After study the present situation of domestic andinternational food safety traceability system, analyze the advantages and disadvantagesof present automatic identification technology, combined with the actual production ofthe meat processing factory in Lanzhou, with the theoretical guidance instruction ofHACCP management system, it determined the key factors of the slaughterhouse porkproduction traceability information. With RFID for automatic identification technology,electronic tag for the traceability information carrier, it records slaughtering productionprocess related information in real time. The paper use the Ministry of AgricultureDecree No.67and EAN.UCC coding rules, and mark the pig when the living pigentrance the slaughterhouse and on the slaughterhouse assembly line, matching them indatabase to ensure the continuity of the data.Second, RFID reader is developed. Using STC11F32XE and MFRC522, anon-contact RFID reader is developed, that communicate based on serial port, and thecommunication protocol obeys the rules of ISO14443A. The RFID PC software isdesigned based on Visual Studio2008, it achieves human-computer interaction.Real-time monitoring of pork production and traceability system based on RFID isdeveloped at last. After analyze the critical traceability information in a detailed,combined with the SQL server2008, we construct pig slaughtering traceability system,which is based on.NET framework. Managers can use it to manage staff's information,read the pork quarantine information, monitor production process in real-time. User cansearch the production information through the software by electronic tags, carcass tags, or one-dimension bar code, they can also learn enterprise's and staff's information.The Implementation of this system ensures the integrity of the pork food chaintraceability in the processing of slaughter production, clears the regulatory body and theimplementation of the main food traceability, provides the scientific mode of productionto producers, furnishes consumers with production information, and contributes to thegovernment regulatory coordination and information sharing.
