The success of a new vegetable cultivar depends not only on production but also sensory quality, which relative to its established varieties and must be evaluated after cooking. Due to the large amount of samples, the breeders sometimes make their selections in the breeding farm field based on the feeling and experiences of themselves. Normally, these breeders give the evaluation results by the experiences of themselves, without unified standard of appraisal. In addition, one expert do the evaluation will be affected by others, the evaluation data will be influenced by obvious subjective factors. In the traditional process of sensory evaluation of agricultural products, from questionnaire design, data acquisition to data analysis, the results show and so on, remains handworks, which causes considerable human resource waste and feedback delay.This paper is based on Beijing Vegetable Research Center(BVRC). We work for the overall design of agricultural products sensory evaluation system from the theoretical basis and actual requirement of sensory evaluation system. For the sensory evaluation of agricultural areas is special, subjective and diverse, we further research the sensory evaluation system according to GB/T 102220-1988, GB/T 10221-1998 standard sensory analysis and other relevant state. We choose the evaluation model of agricultural areas according to defined specific categories of products requirement, including evaluation system, alternative vocabulary, data types, evaluation methods and analysis methods.In the sensory evaluation method of choice, this paper based on the evaluation methods of sample to classify, which mainly include:triangle test, score test and rank test. Combine above methods and sensory evaluation process of agricultural to achieve products evaluation.In the process of questionnaire generation, this paper proposed and combined two kinds of label generation methods (random code and uniform code) and two sample distribution methods (Willams Latin Square and random distribution) to overcome the label repetition and method single of traditional methods.Project data for the assessment of sensory data collected in diverse and complex characteristics of freedom, this paper will be based on sensory evaluation of different assessment methods may be used in directional answer, quantitative values, symbols or symbolic expression to describe a variety of vocabulary to express distinction between the different forms of analysis and the results of part of the store, which is automatically selected based on these assessment methods of multivariate statistical tools, and methods of fuzzy mathematics and statistical analysis of these data for statistical analysis, and finally produce a scientific test results.This paper combined the key models of sensory evaluation process with the special system framework of agricultural products to design and develop the sensory evaluation system of agricultural products on the basis of analysis of the sensory evaluation model establishment of agricultural products and the data processing and relationship of evaluation process, which use of WEB SERVICE communication means in the B/S and C/S models.
