Nowadays in the field of sensory evaluation of agriculture products, we can only get subjective assessments of evaluators, but lack of comprehensive analyses. What’s worse, the sensory evaluation process, from questionnaire design, data collection to data analysis and results show.etc, mostly stay in the artificial realization, which caused human resources considerable wastes. Therefore, in this paper, some kinds of comprehensive analyses of sensory evaluation are put forward, and applied to the sensory evaluation system of agricultural products to achieve the automation of the sensory evaluation process and improve the reliability of the sensory evaluation results.Firstly, some kinds of commonly used analysis methods for sensory evaluation are introduced. On this basis, we come up with a method based on principle component analysis to extract the import sensory characteristics of agricultural products, and a mixed way of combining correlation analysis with BP neural network building to determine the important chemical composition closely related to the important sensory characteristics we get. Taking cabbage as an example, the detail process of how to determine the important sensory characteristics and chemical composition are elaborated. The purpose of the former is to obtain a collection of agricultural important characteristics, so that the evaluation process might be simplified, and the purpose of the latter is to make preparation for the mixed assessment of subjective and objective data, which would overcome the subjective limitations of the sensory evaluation.Secondly, how to ensure the validity of the sensory evaluation results of agricultural products is researched, and two implementation methods are put forward. One is the mixed assessment of subjective and objective data, based on such an idea that it would make the results of sensory evaluations more credible if some kinds of objective factors were added into the sensory evaluation data. Another is the evaluators screening experiments; the evaluator should be trained and selected before taking evaluation experiments. The detail process and criteria of the screening experiments are designed in this paper.Finally, the sensory evaluation system of agricultural products is implemented, to which the comprehensive analysis of the sensory evaluation is applied, which makes the automation of sensory evaluation process realized, and also proposes a way of visualization of the results of the evaluation in the form of Crystal Reports solutions.
