Education of ability standard has developed gradually in the west since industrial revolution. At the very beginning, it simply meant the fostering of technicians, while nowadays it has its focus on the fostering of people's comprehensive vocation ability. So the development of ability standard education has covered a long distance, but with promising future. Especially in the recent forty or fifty years, the education has become the most popular and most effective education thought and teaching model in the field of vocation education nowadays in the world.In 1990s', the education thought and teaching model of ability standard was first introduced into China, and began to show its greatness in promoting vocation education reform. In The Principle Proposition to Deepening Vocation Education Reform Facing the 21th Century published by the Ministry of Education in 1998, it was put forward clearly that"the teaching thought of ability standard must be set in vocation education".With the soaring development of economy after reform and opening, the catering establishment has also won greater developing potential. Therefore, the education of cuisine, especially the advanced education of cuisine is now paid most attention, and the catering establishment requires much more for the education. However, due to historic reasons, the advanced cuisine education is of weak foundation. So the teaching reform is urgent both for the catering establishment and the advanced education itself as well. And the ability standard education should be the direction of modern advanced cuisine education.The realization of ability standard education in modern advanced cuisine education must starts first from the educators, i.e., to train the teachers and education supervisors in the aspect of theory of ability standard education. Secondly, the fostering goal and judging criteria must be set down with consideration of the practical necessity of the catering establishment. Thirdly, the theory of ability standard education must act as direction to the reform of courses and teaching materials. Fourthly, with regard to teaching methods, it must be clear that teaching and learning are of the same importance. Students'learning should be stressed, while teachers and teaching materials should hold the position of reference. In the course of teaching, teachers should work as directors, and give importance to students'creativity instead of simple infusion of knowledge and training of skills.This study includes A Brief Introduction to Ability Standard Education, The Necessity of Promoting Ability Standard Education in the Advanced Cuisine Education, and The Realization of Ability Standard Education in the Advanced Cuisine Education.
