With the rapid development of economy and overall progress of society, people's demands towards food have changed drastically from "enough food" to "good and safe food". At present when they consider food, they no longer focus on quantity but from the perspective of nutrition and health. Food safety has become one of the top concerns of today's society and vital interest of people. Based on relevant surveys, the attention that consumers from both urban and rural areas pay to food safety has reached 95.8% and 94.5% respectively.With the ever increasing demands to food safety and frequent events relating to poisoned food, there are many problems exposed in the process of food production, process, sale and consumption in our market. Moreover, there are some problems in the system of food safety supervision and management, as it involves in the complicated nature of questions relating to different aspects and levels and fields of the society, and plus the newly implemented Food Safety Law and the gradual improvement of the system of food safety supervision and management. The duty of supervision and management of food safety in circulation intermediaries fall on the administration for industry and commerce. The faculty of the administration feels not only honor but also great stress from the assignment. It is a must to have a thorough understanding about food safety issue before completing the task.
