Detection and analyze of Food texture play an important role in food production, such as softness, elasticity and crispness. It all needed to measure and analyze the food texture parameters in various food-developments, the evaluation of quality control of production process, food scientific research and teaching experiment. Early, people often depend on the sensibility experience to grasp each kind of nature of food in food-developments. With food production industrialization, only experience cannot satisfy the standardization, the scale, the industrialization which are needed, Therefore, in order to meet the rapid development of the food science and the market, it is a urgent necessary to carry out the development and research of detecting and analyzing system of food texture.This system unifies the advanced virtual instrument technique, the single-chip technique, the sensing technique, the test technique and the control technique, and then applies to detection and analysis system of food texture, and realizes automatic detection and analysis of the Food texture parameter. The system hardware circuit design, real-time gathering of experimental data, the automatic reduction analysis and the anti-jamming design of software and hardware is the key point of this system research.The system uses the virtual instrument technique and single-chip technique to carry out its design and construction. Many module circuits are designed in the system and the part choosing, such as the force sensor, the data acquisition, the serial-port communication and the design of like the expanded LCD. The pressure sensor, the position sensor and the time's measurement are used to get every experimental data, and the great data storage, the fast computation, the logic analysis function of the computer realize the automatic reduction of experimental data. Based on the formidable functions of Labwindows/CVI of the virtual instrument's developing platform, the design method of the modularized program is adopted, and the application software realizes signal gathering, the dynamic curve demonstration, the correct analysis and processing of the experimental data. The multi-thread technique is adopted in the software to realize the data acquisition, the interface's demonstration, the real-time and accuracy of data processing. In addition, this system has realized the data long-distance transmission by using the Labwindows/CVI Datasocket technique, and laid the solid foundation for its development of the network direction.
