Ferment temperature control would directly affect beer quality as a pivotal working procedure in brewery. Therefore research on the ferment temperature automation is precondition improving works level as well as market competition. Comparing to developed countries, the automation level in our country needs urgent enhancing, arising from lately entrance. Presently domestic beer ferments adopt central data collection and manual operation mostly, resultantly difficult to quality requirement. To meet the requirements in national medium and small enterprises, independent innovation on current intelligent automation is being urgent status hereby.Firstly this paper designs temperature segment fuzzy formulae, which are based on physical chemistry characteristics and practice experience with beer fermentation, secondly establishes ferment temperature mathematics models originated from site information and data, thirdly implements segment simulation automation by VB6.0, and ultimately the fuzzy formulae are transplanted to siemens WinCC via C script language, where segment fuzzy formulae simulation is implemented. The simulation results show that it might be in favorable of oncoming engineering realization.The innovation of our work is introducing segment fuzzy formulae into beer ferment temperature control system, and designing corresponding controller herein. Besides, the research whereupon can provide a basis for further industrial application to a certain extent.
