In order to improve the level of automatic measurement in the dairy fermentation process, the intelligent detection device for the measurement of dairy fermentation acidity is designed and developed which is controlled by a single-chip, and because of the substitution of on-line measurement for off-line measurement, the quality of the products is guaranteed technologically. The intelligent device for the measurement of fermentation acidity is composed of hardware and software. The hardware mainly is consisted of CPU and its extension, data collecting , man machine interface and the power of the system. The software, which employs modularization method, includes modules such as main programs, keyboard management, LCD, break service, measurement control and results treatment etc. The experiment has shown that the measuring system had been working in good condition, and automatic calibration, automatic compensation, automatic measurement and automatic display are achieved with a measuring precision of 0.02PH, which is got through the comparison of the on-line measuring of the standard buffer liquid by the intelligent device for the measurement of fermentation and the chemical titration in actual production. The application of the device will give rise to great social and economical profits in dairy industry and be of good value of reference for environmental protection and chemical industry as well.
