The emergence of new retail has accelerated the transformation and upgrading of the entire retail industry.Major e-commerce enterprises and traditional retail enterprises have opened up new sales channels to create a new retail model of "online+ offline + logistics".As a representative of the retail industry,fresh supermarkets have also appeared many new retail formats,such as FRESHIPPO,SUPER SPECIES,SU FRESH,etc.,S fresh supermarket established in early 2018 faces fierce market competition.In order to improve competitiveness,S fresh supermarket must improve the sales capacity,profitability and user experience.As the source of retail operation,procurement directly affects the competitiveness of enterprises.The procurement management of S fresh supermarkets mainly focuses on category optimization and supplier selection.Therefore,solving the existing problems of category evaluation and supplier selection has become a top priority for S fresh supermarket.In terms of category optimization,S fresh supermarkets use the value of sales index to represent sales level for category evaluation,ignoring the impact of profitability and user experience on commodity value,and the value of sales index can't accurately represent sales level.This thesis establishes a multi-index evaluation model,comprehensively considers the impact of sales level,profitability and user experience on commodity value,selects sales volume,gross profit margin and customer satisfaction as evaluation indicators,and uses expert scoring method to determine index weight according to category role,and analyses the evaluation results to select low-value commodities and eliminated,so as to improve the overall sales level,profitability and user experience of this category.In terms of supplier selection,S fresh supermarket adopts the method of internal supplier first,but the selection of internal supplier does not necessarily make S fresh supermarket obtain more profits than selecting external suppliers.This thesis establishes a profit function,comprehensively considers the impact of purchase price,stock-out rate,order frequency and order quantity on profit,and introduces five variables of purchase cost,shortage cost,ordering cost,inventory holding cost and sales income,and calculates the profit obtained by S fresh supermarkets when different suppliers supply in the same time period,choose the supplier that brings more profit.Through case analysis,the validity of the multi-index evaluation model and the feasibility of using the profit function to select supplier are verified,which provides a valuable reference for the future category evaluation and supplier selection of S fresh supermarket.
