With the development of national economy and the improvement of people's living standard,people's concern about food problems has shifted from subsistence to safety.In the whole food chain from "farm-to-table",food production enterprises occupy a core position,and small and medium-sized food manufacturers account for over 80%of the total food production enterprises.Therefore,it is very important to improving the food safety risk management of small and medium-sized food manufacturers to solve the food safety problem in our country.The purpose of this study was to small and medium-sized food production enterprises of the food safety risk management ability to optimize and improve the enterprise crisis management awareness,perfect the enterprise crisis response strategy,and thus reduce the risk of small and medium-sized food production enterprise survival and development.This study conducted a survey on food safety risk management for small and medium-sized food production enterprises in Zaohuang,Shandong province.Analysis of the lack of food safety risk management ability of small and medium food production enterprises.Mainly from the development status of small food production enterprises,the risk of food supply chain in the food raw materials procurement,production process of the key control points,the risk of warehousing,transportation,sales process,the traceability system in food circulation and recall system,enterprise food safety consciousness of the practitioners to establish an in-depth analysis of the corporate image.The study of the sample enterprise and the food safety risk management of small and medium-sized food enterprises were studied.This paper puts forward the strategy of improving the risk management ability of enterprises' food safety from the government to give full play to the guiding role of the government and the independent consciousness of enterprises and enterprises in the food safety management.Based on the government's perspective,to improve the laws and regulations and standard system,strengthen supervision,strengthen the education training of food safety risk management and the promotion of HACCP system.Based on the company's own perspective,to increase the awareness of security responsibilities,increase inspection and investment,improve inspection capacity,and actively build up the HACCP system.Through the food safety crisis response strategy,practice food safety crisis management plan,establishing active recall system,completes the crisis public relations media,to reduce the security risks of small and medium-sized food production enterprises.
