Safety Risk Control Of Food Supply Chain Based On Traceability

With the continuous progress of social economy,rising living standards,consumer demand for food quality is also increasing,but the world's frequent food safety incidents in recent years not only make consumers feel anxious about food safety,but also has had a negative effect on the social stability and progress.The food safety depends on the level of food safety risk control,therefore,the state gives food safety risk control an unprecedented attention,and the government actively takes measures to protect food safety,in 2014,the first batch of food safety demonstration city to create a pilot work to carry out,at present,has identified the third batch of pilot cities,the food traceability,security risk prevention and control as one of the key implementation of the project;2015 new revised "Food Safety Law"clear the establishment of China's food traceability system and food recall system,food safety traceability system has been listed as China's "thirteen five" a strategic project,we can see that the state pays close attention on food safety risk control and food traceability system construction,at the same time,the theoretical community also carried out more in-depth discussion.In this active practice and theoretical background,this paper draws on the background of risk management and food traceability system construction,introduces the current research situation,analyzes and compares,thus confirming the research direction of this paper.The second part describes the theory of food supply chain,food traceability and risk management.The third part analyzes food traceability from the point of view of the traceability level,driving force,advantage and obstacle,and uses the questionnaire to examine the attitude of consumers to food safety and food traceability system,to understand the consumer demand for food traceability system and trust,in order to help to improve the food traceability system construction and promotion,and thus contribute to food safety risk control.The fourth part identifies the security risks in all aspects of the food supply chain;combined with the past three years the State Food and Drug Administration food sampling data,summed up the five major types of food safety risks,draw a conclusion of the main reason of China's food safety issues;uses the risk matrix method to assess food supply chain risk of each link and to identify the serious risks that exist in all aspects by interviewing the food quality testing room inspectors,food industry practitioners and related scholars;In the fifth chapter,the mathematical model of safety risk transmission is established.Monte Carlo method is used to simulate the conduction process,and the dynamic process of food supply chain security risk generation and conduction is analyzed.The sixth part puts forward the safety risk control measures of traceability food supply chain from three aspects:technology,management and supervision,and provides a perfect security system for food safety.Finally,the paper summarizes the whole paper and puts forward the research prospect.
