The Research On Food Safety Traceability System Based On Supply Chain

Recently, the food security problems directly impact on people’s health and life safety. There are also low confidence from consumers for food safety and security. The food safety has caused the globally extensive concern. However, the current instance of our country in the entire food production processtraceability system is still very few. How to find an effective tracking, management, retrospective assessment methods to ensure safety is an important issue to China on food safety issues and which needs to be solved. To ensure the food safety becomes more and more important. From the perspective of supply chain management and traceability System, and For the purpose of ensure the food safety, this thesis has found the main problem is that the information of supply chain is asymmetric.Based on the theory of supply chain management and traceability system management, this thesis has built a traceability system of Nanjing salted duck industry, including three parts:The first part contains the first and the second chapter, and this part has determined the research topic and reviewed the journal of food supply chain management and traceability system management; The second part contains the third, the fourth and the fifth chapter. After making Nanjing salted duck industry as a research object, and analysing salted duck characteristics, this part has built a traceability system of Nanjing salted duck industry. This system has put forward the main way of traceability system. Then this part has analysed the feasibility of applying; The last part contains the sixth chapter. This part has smmarized the conclusions and innovationof the study, and pointed out the inadequacies and limitations of this study on the traceability system construction, then maken the furthe prospect of building this system.
