In1984, China government announced to the world that they had basically solved theproblem of food and clothing, which marked the food safety problem in our country, began tochange from quantity to quality and safety. The grim reality of frequent food quality safetyevent in recent years in China has important theoretical and practical significance to study onrisk analysis of food quality and safety. As food has many multilevel attributes, such as searchexperience and credence goods, then we can evaluate and control food quality and safety riskmanagement very well according to study food supply chain. For the main body of foodsupply chain, the occurrence probability of effective control of food quality and safety risk,reduce the loss of the risk to consumers, can help food enterprises to control food qualitysafety risk, realize the sustainable and healthy development of enterprises. Through the supplychain as a starting point for the implementation of food quality and safety risk managementcan effectively improve the plight of the development of China’s food industry, reshaping thefood enterprise image, to restore China’s food quality and safety of consumer confidence, sothat China’s food industry can develop faster and better.This paper is divided into five parts. The first chapter introduces the background,purpose and significance of the study, and reviewed the current research scholars, laying thegroundwork for the following studies. The second chapter describes the theoretical knowledgeof food quality and safety risks and the food supply chain. Then combining foodcharacteristics and the characteristics of the food supply chain analysis the factors affectingthe quality of food supply chain security risks. Finally, combined with the practical caseanalysis of influence factors, conducive to rapid identification, quick to take measures toavoid risks.Then for the third part, based on the study of influence factors, combined with thefood safety incidents in China in recent five years and using the method of grey correlationanalysis, evaluated the influence factors of each link. The fourth chapter is the food supplychain quality and safety risk control part, according to the third chapter of the evaluationresults, by using evolutionary game model to analysis production enterprises, consumers andthe government, summarized the optimal control strategy to achieve the effective control of food quality and safety risks. The fifth chapter is the end of the article, summaried the full textof this article and put forward to the study of this field.
