Braised chicken,as one of the traditional meat products,is favored by consumers because of its unique flavor.However,most Braised chicken producers are small and medium-sized enterprises.Some manufacturers even do not have mature technics and perfect product control mechanisms.Problems like total number of colonies exceed the standard,bulge bags,products corruption while well packed and so on are very common to see.This not only poses potential harm to the health of consumers,but also brings economic loss to the company and affects its reputation.In this paper,taking company L as the research object.First,collect sample data through construction of model contains factors affecting the product quality and questionnaire survey of small and medium-sized enterprises produce braised chicken,then use SPSS to analyze the questionnaire data and measure the impact of each factor on the quality of the product.Second,sort out the current situation of product quality management in enterprise L from four aspects: organizational structure,current quality management system,quality management activities and quality management in the process.Using the ISO9004 maturity evaluation model to evaluate the quality management of enterprise L.Problems of product quality management in enterprise L are analyzed through on-the-spot investigation and questionnaire investigation on its employees.Again,combine conclusions of the influencing factor model and cause of the problems in analysis of current situation of product quality management in enterprises,main reasons are as follows: Managers pay little attention to quality management,quality consciousness of the staff is relatively weak,performance evaluation system is not sound,lack of systematic learning and sharing mechanisms and the ability of quality management and control in production process needs to be improved.Finally,by combining quality management theory and ISO9000 quality standards,suggestions are put forward as follows: Strengthen the leadership and commitment of management,establish an incentive system for continuous improvement,improve the performance evaluation system,establish a systematic learning and sharing mechanism,strengthen the production process quality management control and other suggestions.We hope to provide a reference for small andmedium-sized chicken producing enterprises to improve levels of product quality management.
