With the improvement of living standards and social development, people's demand for food will also increase. The demand for food is mainly safe and healthy, therefore, frozen food comes out. Frozen com hot dog business is supported from formula processing, and not seasonal and regional constraints as breakfast, it can be large scale industrial production. Frozen corn hot dogs can through effective low temperature for a long time to maintain the original quality of fresh food, the microwave just serving it for 2min before eating, it is so convenient for consumers and producers can get a lot of benefits.Therefore Frozen corn hot dogs in this research is very important, and has great market potential.In this paper, frozen corn hot dog products for the study, the main research formulation and process parameters and their hot dogs wrapped in flour.First, hot dogs formulations were studied to determine the best formula of hot dogs, followed by the recipe and process conditions to optimize breaded hot dogs, hot dogs and frozen corn products plant are designed through experiments with the following conclusions:The effect of hot dogs, flavor formulations to hot dogs, sensory evaluation score is to identify and optimize the best formula of hot dogs. In pork, fat fat meat and chicken (the ratio of 4:3:3) as the base material, the total amount of 100%, accounting for various other accessories ratio:wine 4%, glucosel.25%, monosodium glutamate 0.7% phosphoric acid compound 0.35% salt, sodium nitrate 0.015%, sodium erythorbate0.04%, starch 17%, salt 1.75%,soy protein isolate3.0%, egg 12%, Carrageenan0.5%, compound spices1.2% (paprika, pepper, pepper powder, ginger powder 1/4 each).Corn flour, soybean powder grain as raw material, add water, mix baking fermentation product of sensory evaluation and hematocrit evaluation, determine and optimize the optimal formula Breaded hot dogs and optimal process parameters. The results showed that the best formula for the hot dog wrapped powder:100% of the total amount of flour,25% corn flour, soy flour 5%,40% egg yolk powder, yeast 0.5%,2% baking powder, sugar and cotton 40%. The optimum parameters were:fermentation time 60min, baking temperature of 180 ?, baking time of 16min.Production line design study proposed a certain amount of frozen corn hot dog food plant. Frozen corn hot dog food in the country is still in the development of new products, currently it has not yet produced in Frozen corn hot dog products factories in China, so the market prospect is very broad. The design of the various schemes and choices compared to determine the best formula and process parameters of Frozen corn hot dog food. For material balance based on this, process design, equipment selection and plant layout design and calculation are based on the results of the design using AutoCAD drawing process design drawings.
