The problem of food safety is a hot issue in the current research of the world. In the reality of China’s current food safety problems frequently, has increasingly become a hot issue of the National People’s attention. Along with the social awareness of food safety problems and the increased focus on food safety issues, people’s attention degree is greatly improved, the requirements are also increasing, food security has become one of the main issues of public concern, also gradually becomes one of key scholars in the related research direction. Foreign research started early, relatively complete theoretical system, some large supermarkets in the use of international food safety theory has achieved mature experience. Domestic research is still at the exploratory stage, the supermarket food safety awareness is relatively weak, theory and practice are inadequate, is not conducive to long-term development of supermarket chains. Supermarkets are the main distribution center for food distribution, the study of food safety issues, especially supermarket food safety issues has important significance.This article related to food safety based on the concepts and theories of learning, learn foreign supermarkets, especially in Metro Supermarket main approach to food safety risk control, analyzes the main source of supermarket food safety risk, the use of HACCP theoretical analysis critical control point method to explore the roots of the associated risks occurred. Meanwhile, through the successful development of Changsha Better Life supermarket for research, study and its main approach to food safety control, and summarizes its main food safety practices and shortcomings, combined with domestic and some large supermarkets and advanced mode risk control theory, Better Life supermarket food safety risk for critical Control Point Status and problems in depth.
