Since the Sanlu milk powder incident in 2008,the quality and safety of food has developed into a major livelihood issue,and it is urgent to solve the problem of food quality and safety.In order to study how to control food quality and safety in the supply chain environment,first of all,based on Stackel-berg game model,the amount of harmful food additives is used as intermediary,the expected return elasticity coefficient of each node enterprise in the food supply chain is constructed,and the conduction effect of food quality and safety risk is analyzed.Research shows that caused by the illegal acts of the raw material supplier of food quality and safety risk conduction effect in the food producers and food distributors of these two nodes is weak,while in the raw material producers of this node is strong.The risk transmission effect of food quality and safety caused by illegal behavior of food producers is weaker than that of raw material suppliers and food distributors,while in the food producer,the node is stronger than the two nodes.Then,by introducing the effective sampling rate ?,a dynamic game model between food raw material suppliers and producers was constructed,and the food quality and safety risks of these two nodes were regulated.The results show that:when the probability of supervision of government regulators on food producers and suppliers of raw materials are high,food raw material suppliers will provide high quality and safety,and food manufacturers will choose to produce high quality and safe food.When government regulators maintain a higher regulatory probability for food producers and keep their effective sampling rates on raw material suppliers at a high level,even if the government regulators have a lower probability of monitoring the raw material suppliers,they can also guarantee suppliers to provide high quality and safe food raw materials,while food producers produce high quality and safe food.Corresponding numerical examples are also given.Finally,combined with the analysis of this paper,the relevant suggestions to promote the food manufacturers to produce high quality and safe food are put forward.
