With the increasing level of the world competitive sports, the food safety work of the athletes have been paid more and more attention In the countries of the world. Through scientific dietary collocation, the athletes have to add a variety of nutrients required daily in each meal, guarantee the athlete’s physical development and physical strength. And it make the athletes body function under the condition of the most suitable training innutrition state, the best, so as to improve the recovery and prevention of sport disease scores and the athletes physical strength of athletes with good effect. HACCP is a confirmation, analysis, control of the production process and it may occur in biological, chemical or physical hazards integrated food security system, so it is a new quality assurance system. Because of its scientific, practical and effective the HACCP system has been accepted internationally. The constructor based on HACCP can be in the acquisition process control key link, diet enhanced food safety guarantee of athletes.In this paper, aiming at the characteristics and development trend of food safety management of athletes flow are analyzed and summarized, and put forward a series of problems existing in the diet safety of athletes. How to use scientific, standardized management process of athlete’s diet safety management, need a long time exploration and practice process. At the same time, some existing realistic problems are analyzed. And the composition and characteristics of HACCP process management of domestic and foreign athletes diet in safety management. It put forward the food safety of athlete’s critical control point identification and acquisition, the implementation of HACCP management based on process, and analyses the examples at home and abroad at present implementation of the athlete’s diet safety management of HACCP, and points out that the some problems and quasi solution among them, and for the HACCP application in food safety athletes are prospected.
