Eriocheir sinensis, known as Chinese mitten crab, is delicious taste with a unique and pleasant aroma. It also has good nutritive value including high levels of fatty acids and amino acids(Comparison of fatty acid and amino acid profiles of steamed Chinese mitten crab). But their edible parts, particularly hepatopancreas and ovary, generally contain very high levels of lipids that may have negative effects on human health. Therefore, this study chosen eriocheir sinensis as the experimental materials, mice as the experimental animals, in order to explore the changes of mice through the process of feeding crab diets.The mice were fed with diets containing one of crab edible parts for 12 weeks. Their total body weight, total cholesterol levels(TC), triglyceride(TG), low-density lipoprotein cholesterol(LDL-C), high-density lipoprotein cholesterol(HDL-C) in plasma were measured, Atherosclerosis index(AI) was also calculated at the end of experiment. Our results showed that:(1) The crab diet led to higher body weight as compared with normal control diets, the female and male mice which fed the female crab with normal diet had significantly higher 16.92% and 17%body weight than the normal group.(2) The crab diet had a little effect of visceral organ in female mice, but it effects the visceral organ in male mice.(3) The crab diet effect the female and male mice’s serum lipid, the mice which fed female and male crab diet had 28.05% and 15.61% higher level of TC than that in the normal control group.(4) The crab diet had a higher effect on male mice’s serum lipid. As for LCI and AI, the male mice groups were significantly higher than that of the normal group.We use ELISA to test the level of FASN(fatty acid synthase), HMG-CoA(3-hydroxy-e-methylglutaryl coenzyme A reductase) reductase, LPL(lipoprotein lipase) in mice liver. Our results showed that: the mice which fed female crab hepatopancreas diet and male crab gonads diet were significantly higher than that in the normal control group. The effect of crab diet on the level of HMG-CoA reductase showed no significant. As for LPL, all the experimental groups were higher than the normal group.We explore the effect of female crab on male mice through short and long time experiment. The short experiment last 20 days, they are high fat diet group, normal group, fed crab diet group and fed one crab diet each four days group. After fed the crab diet, in 12 h, 24 h, 48 h, part of the mice were sacrificed, the weight, the visceral organ, the serum lipid were measured. Our results showed that:(1) In short time experiment, the male mice which fed high fat diet and crab diet were higher than the normal diet. The high fat diet group mice eat more than normal group every day. In long time experiment, the mice which were only fed crab diet every day, it had significantly higher body weight than the normal group.(2) As for visceral organ, the mice fed high fat diet had a significantly higher liver index and fat index than the normal group.(3) The mice which fed high fat diet had a higher level of TC and AI, after fed once crab diet, the level of serum lipid were rise, and then changed over time slowly return to normal level. In long time experiment, the level of TC in crab diet group mice was significantly higher than that of the normal group.We use ELISA to test the level of FASN, HMG-CoA reductase, LPL in mice liver and adipose tissue. Our results showed that: the mice which fed high fat diet had a higher level of FASN and HMG-CoA reductase in liver and adipose tissue. The crab diet had a higher effect on the level of enzyme in adipose tissue than the enzyme in liver tissue, but it returned to normal level after 48 h. In long time experiment, there was no significant difference between the groups of LPL. As for the level of FASN, the mice which fed crab diet were higher than normal diet. As for the level of HMG-Co A reductase, mice fed with high fat diet produced increase levels of HMG-CoA reductase as normal group but not statistically different when compared with other diets. There was the same rule in the adipose tissue. Among the enzymes, there was no significant difference between the according to certain frequency diet groups and normal group.This paper mainly explored the edible parts of eriocheir sinensis effect the blood lipid and lipid metabolic enzymes in mice. The study found that long-term feeding the crab, especially the female crab have bad effects on male mice blood lipid. One side, the experimental mice had a higher weight, liver index and fat index than normal group. On the other side, the crab diet effect the level of TC, TG, AI and FASN. But according to a certain frequency feeding, there would be no adverse effect on mice. On the contrary, it may adjust the blood lipids in mice.
