The performance evaluation is the enterprise staff training, policy, organization construction, incentive mechanism basis. Performance appraisal is the main event, form the management objectives and principles of strengthening and enterprise performance evaluation on the basis of equality. Performance assessment is a system engineering. Performance assessment approach has many kinds, each unit can select the suitable performance management method based on their own characteristics. The difference between different industries and departments of the great. Enterprises should follow the practicability and rationality of the principle in the selection of appropriate performance appraisal methods. The best choice of performance management is not the best method of enterprise. In the different development stage and level, management system is not the same. Performance management of large hotel chain has its own characteristics. Because of the large chain hotel is the mainstream form of hotel development, a large hotel, not very good to all levels of performance evaluation and reasonable separation of hotel industry, led to the current performance appraisal in poor condition. This paper takes this as a starting point and focus on the analysis of the phenomenon of large chain hotel. This paper adopts the following three methods in the process of writing:field survey research method, chart analysis method and example analysis method.In this paper, the domestic and foreign enterprises performance evaluation theory based on the analysis of present situation and the reasons of performance appraisal, large chain hotels in China, and combined with case analysis, provides a series of suggestions for improvement of performance management of large hotel chain. This paper is divided into five parts to explain. The main contents of each part are as follows: firstly, introduces the major hotel chain performance appraisal background, related literature review, the purpose of this study, the significance and the research method; the second part, the theory of performance evaluation of. From the concept of performance evaluation and effect, methods of performance evaluation, performance appraisal principle, performance appraisal target, performance appraisal content and the appraisal index with six aspects; the third part, the large chain hotel performance appraisal status. Respectively from the three aspects of large hotel chain, there is a large hotel chain performance appraisal of the problems and causes of problems for analysis; fourth part,"Haidilao" analysis of hotel performance evaluation case. The part of a comprehensive analysis and summary of "Haidilao" content, performance appraisal method, appraisal process and experience; the fifth part, to improve the large chain hotel performance appraisal proposal. The part of the recommendations from the following five aspects:the cultivation of good performance evaluation environment, establish a diversified, establishing incentive mechanism involved in the management of supervision mechanism, strengthen enterprise management theory training and reasonable design of employee performance appraisal index system. Finally, summarizes the prospect, this paper pointed out the shortcomings and the unsolved problems.This paper studies on performance evaluation management is mainly focus on the qualitative aspect, due to the limitations of the data sources of collected, the relative lack of empirical study in the future, I will continue to pay attention to it.
