The levels of wine production and consumption in our country have entered the top 10 of the world. With the improvement of living standard, the increase of health awareness and the change of consumption idea of the Chinese, the wines find favor with the vast consumers.The good market reaction and the huge potential consumption provide superior external environment for the development of wine industry in our country.After the industrial restructure, the overall situation of the wine processing industry in Hebei, as an important Grape-farming district in China,is improved.But the majority of wine production is in small scale,decentralized and less competitive in the market.The creative ability of science and technology of wine processing industry in our country has a large gap with developed countries,especially in the aspects of knowledge innovation, technological innovation and market supervision innovation.Therefore, the research of science and technological innovation in wine processing industry has an important practical significance.Based on the research of current situation of Hebei wine processing,and according to the classification of science and technology innovation,this paper made system analysis on knowledge innovation,technology innovation and market supervision management innovation three aspects of wine processing:in the knowledge innovation, mainly through the analysis of current situation of scientific research innovation in enterprise and scientific research institutions,find out the key point of knowledge innovation in wine processing, and put forward the "government guidance, market driving,university-enterprise joint tackling" three kinds of wine industry knowledge innovation mode.In terms of processing technology innovation of wine,the processing technology innovation of wine in enterprise was analyzed based on the technological process,contain breeding new variety and cultivation technique of grape,complete set of equipment of processing and development technique of associated equipments,technology development in strains of saccharomycetes and lactobacillus and development technique of auxiliary material in processing technic of wine and so on.The key point of processing technology innovation of wine was found out and the key technology wiring diagram of processing technology innovation of wine was designed.Then the factors affect innovation ability of processing technology of wine,and then a standpoint that ensuring fond supply,enhancing R&D team construction by expanding the financing channel to facilitate enhancing technology innovation was presented.By researching and analyzing our existing regulatory technology and regulatory system,we made the full supervision,line regulation,integration, supervision and regulatory innovation model clear,and we gave out a detailed description about the wine processing and the regulatory system constructions.Generalizing the above innovation analysis outcome,the paper figure out the following suggestions finally:to construct the wine processing industry elite teams,to form technology innovate and research platform,to set up special key equipments R&D funds,to improve quality security and guide system,to strengthen the government support,etc,and those suggestions are aiming to improve the science and technology creative ability in wine processing industry in Hebei province.
